Posts Tagged ‘No Bake Recipe – Raspberry Creams’

We made these around Valentine’s Day, but you can make them for a St. Patrick’s Day or Easter treats. Use a shamrock or bunny cookie cutter instead of a heart. These are really sweet, so I would use a small cookie cutter. One little bite is just enough.  These would make a great little embellishment for cupcakes or sugar cookies!! (these you don’t bake, they air dry overnight)

  • 1 3/4 cups confectioners’ sugar
  • 4-6 tablespoons of Sweetened Condensed Milk (I added more as I went along)
  • 1/2 teaspoon of Raspberry Extract (Use Peppermint for St. Patrick’s Day)
  • Red food coloring paste (Use Green for St. Patrick’s Day)
  • Mini cookie cutters

For Easter use the same above recipe and use pastel food coloring and egg or bunny shaped cookie cutters!!

Sift the confectioners’ sugar into a large bowl. Gradually add the condensed milk and extract, mixing with a wooden spoon. The mixture will be like thick dough and you’ll have to hand knead it towards the end. Add more milk if it is too stiff. Divide dough and work in the food coloring to get the color you want.  (or do two different colors, or leave one white)

Use confectioners’s sugar to roll onto a clean surface. Treat as you would sugar cookies to roll out to 1/4 inch thickness. Use cookie cutters for shapes.  Arrange on a cookie sheet with baking parchment paper, or waxed paper.

Let dry overnight. They will dry with a soft middle.
